September Restaurant Night
Fifty-two ACAP members and their guests enjoyed a different kind of Restaurant Night on September 14th. Our hosts for this event were the good folk at the Señoria de Sulco, a Miraflores restaurant famous for its traditional Peruvian cuisine. They not only served us a delicious meal, but showed our group how to prepare the recipes that we were about to enjoy.
After an opening pisco sour in the lounge, we moved to the patio area where the kitchen staff had set up an industrial stove - the kind that burns your eyebrows off. There, we had connected the restaurants executive chef, Flavio Solorzano, to a wireless microphone, so he could explain the intricacies of his recipes over the noises of rumbling stomachs, chatty guests and popping wine corks.
Flavio prepared two Peruvian flagship recipes, "Causa Rellena" stuffed with crab, and Lomo Saltado. He also surprised us with a lesser-known recipe, Conger Fish in Sea-Mountain Sauce. He explained that these were three of the dishes that the restaurant uses in their presentations to a niche segment of tourists who are arriving in Peru in growing numbers to partake in culinary tours. It is satisfying to see that Peru is gaining the respect it deserves for its wonderful and diverse cuisine.
